Cheese, Onion, Sausage and Potato Pie

This is a simple dish that is quick and easy to prepare. I use King Edwards or Maris Piper potatoes, but most potatoes will be suitable. You can omit the sausages if you want a vegetarian option.

Serve this dish on its own or with a salad or baked beans.

You can make it in one medium dish (I used an 9 x 7 inch oval dish) or make small individual portions using smaller dishes. This will keep in the fridge for a day. It is suitable for freezing, simply defrost in the fridge overnight before reheating in the oven or microwave until piping hot.
